The Numbers That
Speak for Themselves.
Our nutritional analysis data, plainly presented. The case for gourmet nutrition status is made by the metrics.
The Nutritional Position
Gourmet Nutrition.
Not a Contradiction.
Our Wagyu combines lean-protein efficiency with red-meat micronutrient design and flavour. 50 kcal per 100g. 20g protein per 100 kcal. High B12, iron and choline. ~0.5g saturated fat. This is not a trade-off between nutrition and pleasure. It is both, simultaneously, without compromise.
The nutritional data positions Ivy Farm Wagyu above chicken on protein efficiency and caloric density - while delivering the micronutrient profile and flavour depth that chicken cannot offer. A category of one.
Key Nutritional Findings
Protein density / 100 kcal
20.0g per 100 kcal - above chicken-level protein efficiency (~18.8g) and well above beef sirloin (~17.2g). Predicted to be strongest or joint-strongest on usable protein per calorie.
Saturated fat
~0.5g per 100g - less than chicken breast (~1.0g) and dramatically less than beef sirloin (~2.1g). Red-meat nutrition without the red-meat fat load.
Caloric efficiency
Only ~125 kcal required to deliver 25g protein. Chicken requires ~133 kcal; beef sirloin ~145 kcal. A meaningful protein dose at minimal calorie cost.
B12 / iron / choline
High B12, iron and choline per 100g - combining lean-protein efficiency with red-meat micronutrient design. The best of both nutritional categories.
Protein digestibility
Predicted ~88–94% protein digestibility. Single lineage, controlled biomass, uniform particles - a simpler matrix than conventional meat. Test ongoing.
Fat / protein ratio
~10:1 protein-to-fat ratio, compared to ~8.6:1 for chicken and ~5:1 for beef sirloin. A genuinely lean source of nutrients with excellent flavour.
The Claim
“Gourmet nutrition status is within reach.”
